Jamaican Baked Fries and Roasted Sage Sweet Potato

Today, I’m practicing simplicity.

I can’t recall when was the last time I drove thru for fast food. It hurts my brain to think of deep fry oils they use in restaurants, what goes in it and how many times it’s been reused, the high calories and trans fat, gross. Of course there’s a smarter and healthier way to make fries, um.. make your own.

Cut the potatoes in long strips (peel them or leave the skin on for a rustic texture), here I’ve added sea salt, black pepper, olive oil and my favorite spice in the whole world “Jamaican Jerk”. Make sure they are well coated and bake for 25-30 minutes in a 400F oven.

Your choice, plain, with ketchup, evil creamy jalapeno sauce, eaten by hand or fork, there is no wrong way to enjoy these golden baked fries. Other herbs and seasonings such as basil/garlic combos, cajun, rosemary are pretty awesome too.

Since the oven was on, I roasted another sheet of sweet potatoes. I only used olive oil, sea salt, black pepper and sage. Sweet caramelized potatoes and sage are incredible combos, you absolutely have to give it a try.
