English Cucumber Salad

I’m obsessed with making this summer light dish lately.

Ingredients: English cucumber, salt, rice vinegar, sesame oil, sweetener (I use a hint of Allulose as sugar substitute), garlic power (fresh garlic is even better) and shichimi aka seven flavor chili pepper (available in all major retails)

Yes, it has to be English Cucumber πŸ™‚

Marinate in the fridge for at least 30 minutes

Tangy, spicy, snappy and a dash of toasted sesame oil brings it to a new level. It is so refreshing, crunchy and screams summer! I can eat the whole thing for dinner but it is a fantastic side dish to go with your own bowl such as salmon or shrimp with cauliflower rice. Super versatile and easy peasy to make.
