Spinach Sausage Frittata

Today I just wanted to use my new 10 inch cast iron pan to make something so I picked frittata.

This simple Italian frittata has enormous potential to take on whatever flavors you toss at it. You can pretty much add any veggies or meats you have. It can be served as appetizer, dinner or at brunch on the weekends.

  • Ingredient 1: Spinach, red onion, sausage, tomato
  • Ingredient 2: 6-8 eggs, half cup of milk, half cup of cheese (any kind of cheese, I use parmesan and cheddar)

Dice the onion and sausage, saute until the onions are golden, then add the spinach toss and turn it a little and set it aside. Use a prep bowl to whisk eggs, mix it with milk, cheese and then pour into the cast iron pan (or whatever is oven safe). Stir all ingredients well and send it to the 350F oven for 15-18 minutes.
