Roasted Asparagus with Almonds

No need to scream in order to wake up the spring; simply grab some fresh asparagus and the spring will self invite to your house. We are having an asparagus bonanza here lately (seen as low as $.95/pound) and they just look too gorgeous to resist.

Set the oven to 400F, lay the asparagus on a baking sheet, drizzle a little olive oil, sea salt, black pepper and bake 10-12 minutes. Serve with roasted slivered almonds, minced garlic and a little fresh lemon juice. Another option is to add a little grated Parmesan on top.

 

 

Note: It takes about 3 minutes to roast slivered almonds. Spread them out in a dry frying pan and adjust the heat to low-medium. Turn them constantly until getting brown. No need to add extra oil during the process, the natural oil from the almonds gets released as they get heated up.
