My lunch date: Kale Edamame Goji Berry Salad with Ginger Sesame Dressing. (Geez, could the name be any shorter?)
Ingredients: kale, edamame, goji berry, slivered almond
Dressing: soy sauce, sesame oil, white wine vinegar, grated ginger, sugar (agave)

How fancy is that! I love the sesame ginger dressing, Japanese style. This dish actually tastes better if you let it sit in the fridge for 1-2 hours until the kale softens a little.
