Potato Egg Salad Crostini

My lunch date: Potato Egg Salad Crostini.

 

Ingredients: potato, celery, dill pickle, hard boiled egg, onion, caper, mayo, S&P

 

Cut the potatoes in cubs and boil them until fork tender. Drain well

 

Dice the celery

 

And dill pickles

And red onion (I don’t understand. They are purple)

 

They are ready to go too

 

Group shot. Hey look at those capers!

 

And a scoop of mayo. Don’t be shy

 

Mix everything and add S&P to your liking!

 

Serve on top of toasted warm bread
