Kale Cranberry Salad

My lunch date: Kale Cranberry Salad.

 

Ingredients: kale, red onion, chickpea, barley, soft wheat berry, cranberry, S&P

Dressing: white wine vinegar, agave nectar, water, Dijon mustard, apple sauce

Voila!

 

It is sooo tasty! Super light and healthy but filling. I love the fresh and crunchy texture from the wheat berry. A little sweet, tangy and mustard. YUUUUMMERS!
