Beer Chili Over Baked Potato

School night dinner: Beer Chili Over Baked Potato. (contains awesome photos inside… like every post, of course)

 

Ingredients: Beer chilli, russet potato, cheese, sour cream, cilantro

 

Rinse and dry the potatoes. Pierce them with a fork

 

Wrap them in the foil and bake for 375F. Bake time 1 hour or so

 

After they come out from the oven, cross cut them half way though, gently squeeze both ends to fluff the center

 

I made this beer chili while baking the potatoes

Now put the chili on top of the potato, add cheese, sour cream and parsley

 

Just how I like it!

 

Totally pimped up my chili! Everyday meal can be super fancy. We should also turn this into Chili Dogs or go with jalapeno corn bread too!
