Roasted Sweet Potato Quinoa Arugula Salad

School night dinner: Roasted Sweet Potato Quinoa and Arugula Salad. Oh my! You won’t believe how delicious it is!

Ingredients: sweet potato, red onion, arugula, quinoa, S&P, EVOO and balsamic

Look at these golden puppies! LOVE! (I only use S&P and EVOO, set 400F for 40 min)

Look at these caramelized red onion, man, it’s like eating candy (I only use S&P and EVOO, set 400F for 35-40 min)

Mix em all together (Oh I made the quinoa the night before hand so everything is ready to go)

Add arugula and drizzle some balsamic. That’s all. Simple. Easy. No brainer. Idiot proof. JK

OMG! It is unbelievably delicious! Especially that caramelized onion and roasted sweet potato and fresh arugula. Balsamic really gives it a kick and nice sweet and tangy touch. LOVE IT!! This is a total win!
