Blackberry Tart

Oh my lady gaga! This most elegant classy tart is ridiculously delicious! You won’t believe how easy it is to make. Oh did I mention it’s no brainer? Low fat, low calories, it’s smoother and creamier than peanut butter. (big heart heart)

Pie crust: butter, sugar, all purpose flour

Here is the best part – filling: raw unsalted cashew nuts (soaked at least 4 hours until soften), soy milk, agave nectar, lemon juice and vanilla extract. Combine them in the blender until they are very refined and smooth. That’s all.

They are so delicate, I’m in a good mood just looking at them

 

Bake the pie crust before hand in a 400F oven for 25-30 minutes

 

Like that, ready to roll

 

Assembling. Pour in the filling and decorate with blackberries and mint  (or any kind of berries you prefer )

 

Chill in the fridge for 30 minutes before serving

Perfect fruity freshness is in every bite, all natural sweetness from the avage nectar and cashews, they work so well with this thin sweet crust outside.

 

Note to self: add a little almond milk in the filling next time.
