Celebrating two important b-days at the same day: hubs and earth!

Ingredients: eggplant, sweet potato, red onion, zucchini, garlic, olive oil, sea salt, black pepper and oregano

Cut the veggies in big chunks and drizzle with EVOO, sea salt, black pepper and oregano. Set the oven to 420F degree and roast them for 40-50  minutes

 

Slice the extra firm tofu and baste them with homemade. BBQ sauce made with sauce sauce, ketchup, garlic and onion

 

Panini press did all the work

 

I have decided that blackberry is hands down my fav. fruit

 

Mix and match fresh blackberries, blueberries, strawberries and bananas

 

 Cover in melted chocolate and decorate with chopped pistachio, walnut and coconut flakes
