Crushed Potatoes

Can you tell what they are?

They are my one of my fabulous finds, a premium medley of organic Yukon Gold,  red skin and purple potatoes. Check out those delicate purple ones! As they are so special, they deserve extra special preparation (for me to eat them). Take this adventurous journey with me, I promise you won’t regret it.

Boil the potatoes until they soften,  drain well and place them on baking sheets, gently crush them and season. Set the oven temperature 420F, bake for 22-25 minutes until the top turns golden and crisp.

Ingredients: small organic potatoes, sea salt, black pepper, olive oil, garlic, green onion, paprika, rosemary, dill, etc.

 

 

 

 Drizzle some olive oil and sprinkle with any kind of herbs you prefer and bake

 

 

And a little fresh dill

What I can say? Words can hardly describe these delicate, creamy, melt in your mouth potatoes. The purple ones are complete rock stars! All the herb bake into the potatoes so the flavors are insanely intense! Just in-cre-dible!
