Homemade Ravioli

Here comes Trouble! Bring it yo! I do whatever I can to make things from scratch. “What a control freak”, are you thinking out loud?

  • Dry ingredients: Organic semolina flour. All pasta in the packages are made from this stuff, in case you are wondering
  • Filling: Organic spinach, red onion, garlic and ricotta cheese (or tofu)

Sautee the spinach, onion and garlic, set aside. Mix it well with ricotta cheese and drop them neatly in the ravioli maker. It’s like making dumplings, toss them in the boiling water for 3-5 minutes. Because the dough is so fresh, it takes almost no time to cook. At last, tow with an Alfredo sauce and sprinkle some fresh parsley.

We made total 240 ravioli and put almost 200 in the freezer for school nights or whenever I’m craving for the alternative Chinese dumplings.

 

 

 

 

 

 

 

It was so much fun to make and what a beautiful mess in the kitchen. πŸ™‚

 

Note: I prefer a white sauce, but sweet tomato sauce with basil will do in a pinch.
