Potato Salad

My lunch date: Potato Salad.

 

Ingredients: potato, celery, caper, red onion, green onion and pickle

Dressing: mayo, yellow mustard, EVOO, paprika, fresh dill, sea salt and black pepper

 

Boil the potato until softened, leave the skin (or not)

 

Dice the celery

 

Dice pickles

 

Add capers and potatoes

 

Mix in with dressing adjusting the ratio however you prefer

 

 How simple is that!

 

Lastly, gently sprinkle some paprika and green onions

 

(Note) Some people make the dressing without the mustard, mayo only, however I think it’s a little too heavy and unhealthy, but do whatever feels best for your body.
