Salmon Arugula Crustless Quiche

This is truly one of my favorite dishes to make: Salmon Arugula Crustless Quiche. Ultimate mix & match AF!

Ingredients: Eggs, Red Onion, Salmon, Arugula, S&P, EVOO, Cajun Spice, Soy Creamer, Parmesan, Mexican Cheese Blend

Let’s begin with 8 eggs, shall we?

Whisk the eggs with a splash of soy creamer and red onion for extra creamy and fluffiness

Oh, forgot to mention – bake the leftover salmon in cajun spices prior for 15 minutes
But just look at this shot. That’s not delicious and glory at all π

Combine salmon and arugula

Add a 1/4 cup of parmesan

And 1/4 cup of Mexican blend cheese

Send it in a 375F oven for 20-23 minutes

Serve! I LOVE EGGS!!!!
