White Wine Portobello and Spinach Risotto
Easy school night dinner: Portobello and Spinach Risotto (one pot).
Ingredients: Mini portobello mushroom, spinach, onion, garlic, Arborio rice, milk, EVOO, S&P, lemon juice, parsley, white wine, parmesan
One cup of arborio rice
First we have to make the perfect broth with spinach, and then sautee the rice with EVOO
Add milk or half & half, turn the heat low for 40 min
Check every 5 minutes and turn it. Slowly add more liquid (wine, milk or water)
Add portobello mushroom and garlic the last 15 minutes. Let it simmer for another 15 minutes
Voila!
Squeeze some fresh lemon juice generously and parsley
And lastly a little parmesan on the top. OH MY!
Super rich and creamy! I’m a sucker for portobello mushroom. Love this one pot dish, super spinachy, lemoney, cheesy and of course white winey. Teehee!
