Chipotle Farro Acorn Squash Boat

Another classic fall dish: Acorn Squash Boat with Chipotle Honey Farros. [REPOST], as timing seems appropriate πŸ™‚

 

 

Ingredients: Acorn Squash, Farro, EVOO, S&P, Chipotle Chili, Onion, Garlic, Parsley, Pecan, Lime and Cheese (feta or parmesan)

 

Cut the acorn squash half, brush them with EVOO, S&P and some honey. Set oven ready for 425F, about 30-35 min

 

 

Toast the pecans

 

Drizzle some honey (or agave). So caramelized!

 

Sautee the cooked farro with onion, garlic, EVOO and some Chipotle chilli spice

 

Incorporate the honey pecans and fresh parsley with farro

 

Meanwhile, acorn squash – outta oven! Beautifully done!

 

The big idea is to serve the farro “stuffing” in the roasted acorn squash. Be sure to drizzle some fresh lime juice, parmesan and fresh parsley on top

 

Just like that!

 

Whoa! Love the creativity and delicacy. Honey pecan mixed with Chipotle chili tastes indescribable. Smoky, spicy, salty and sweet all in one. Not to mention roasted acorn squash turns out SO buttery and melt in your mouth.
