Jamaican Jerk Taco
Back to school night dinner: Jamaican Jerk Taco!
Ingredients: Slaw, Soy Curls, Red Onion, Garlic, Coconut Oil, Cilantro, Corn Tortilla, Chipotle Hot Sauce
(Soy curls are great healthy vegan protein substitute but you can definitely use chicken or beef of your choice)
Begin with making this yum yum slaw!
Tahini, Soy Sauce, Rice Vinegar, Black Pepper and two bags of cabbages from HEB
Put it in the fridge overnight or at least 30 minutes before serving
Start preparing the soy curls by soaking in the water for 15 minutes
Drain and dry. Season it with Jerk Spices and Apple Cider Vinegar
Sautee the curls in coconut oil with red onion and garlic. Man, it smells so yummy in the kitchen!
Assemble! Corn tortilla, soy jerk curls, slaw, fresh cilantro and chipotle hot sauce
Whoa! Like that. Other topping ideas – shredded cheese and sour cream! This is a FANTASTIC school night dinner. Simple, healthy, flavorful and very budget friendly. π
