Butternut Squash Mac n Cheese


Who can resist such a rich golden luscious color? I predict I will serve this dish on my Thanksgiving table.
Ingredients: Butternut Squash, Cashew, Soy Milk, Garlic, S&P, EVOO, Paprika, Pasta, Parsley

Slice the butternut in half

Take out the seeds, sprinkle some S&P and EVOO. Set oven 420F and roast for 30-35 minutes

Voila

Take the meaty part out, set aside, let cool

Next to make the creamy cashew. Soak the cashew in the water overnight or 3-4 hours
Let the food processor do the rest. I use soy milk to blend with cashew

Combine the butternut squash with creamy cashew in the food processor. Add S&P, paprika and minced garlic

Voila!

Pick your favorite Mac & Cheese. I love these tri color sea shells

Combine all and add fresh parsley

Serve!
