Summer Quinoa Tomato Medley Salad

Did you all have fun this summer? I certainly did!

 

Ingredients: Cherry Tomato, Corn, Arugula, Quinoa, Balsamic Vinegar, EVOO, S&P, Parmesan

 

Tric-color cherry tomatoes, arugula, quinoa and fresh corn! (Key word: FRESH CORN)

 

I drizzled some EVOO and balsamic vinegar, salt and pepper. That’s it. Keeping it as simple as possible.

 

Serve! Oh, some shaved parmesan is a must too!

Here is the next day lunch edition! Not too bad at all!
